Taste Buds Structure and Function

  • Location: Situated on the tongue, soft palate, pharynx, and epiglottis.

  • Components: Contain gustatory cells linked to microvilli that extend into saliva.

  • Cell Types:

    • Supporting Cells: Provide structure, maintain chemical environment, can differentiate to replace damaged gustatory cells.

    • Gustatory Receptor Cells: Approximately 50 per taste bud, responsible for taste detection.

    • Basal Cells: Stem cells that produce supporting and gustatory receptor cells.

Taste Detection

  • Basic Tastes: Sweet, salty, sour, bitter, umami (savory).

  • Taste Mechanism: Molecules must be dissolved in saliva to bind to taste buds.

  • Tastants: Molecules that stimulate gustatory receptors.

Taste Transduction Process

  • Gustatory Signal Generation:

    • Binding of tastants leads to receptor potential generation through ion channel opening (Na^+, K^+, Ca^2+).

    • Different pathways for salty (Na^+), sour (H^+), and other tastes (linked to G-proteins and secondary messengers).

  • First Order Neurons: Sensory neurons carry signals to brain.

Cranial Nerves Involved in Taste

  • Facial Nerve (CN VII): Anterior two-thirds of tongue.

  • Glossopharyngeal Nerve (CN IX): Posterior one-third of tongue.

  • Vagus Nerve (CN X): Taste from throat and epiglottis.

Brain Processing of Taste Signals

  • Signals travel to the gustatory nucleus in the medulla oblongata.

  • Projections to limbic system, hypothalamus, and thalamus.

  • Conscious taste sensation originates from thalamic projections to the primary gustatory area.
