Some plants and microorganisms can respire both aerobically and anaerobically. For example,
when soil becomes very waterlogged roots may not be able to get enough oxygen and the
bacteria that live in your gut have access to very little oxygen.
The equation for anaerobic respiration in plants and microorganisms is:
Glucose = ethanol + carbon dioxide (+ energy)
We call this process fermentation.
Yeast is a type of fungus (microorganism) that is capable of respiring aerobically and
anaerobically. The respiration of yeast is used in the production of bread and many alcoholic
drinks.
Why is the fermentation of yeast used in these two processes?
