Composition and Characteristics of Flour

Gluten is the structural backbone of most baked goods, formed when two specific proteins, glutenin and gliadin, are hydrated and agitated. The quality and strength of this gluten network are heavily dependent on the type of flour used. A blend of hard and soft wheat flours, designed to provide a balance of strength and tenderness for versatile use, is known as all-purpose flour. In the context of cake formulas, flour is categorised as a toughener because its protein content provides structure that offsets the tenderizing effects of fats and sugars.

Flour must meet specific standards regarding its moisture levels and processing. The water content in flour is strictly regulated and cannot exceed 15%15\%. Furthermore, flour undergoes a natural or chemical oxidation process to improve its baking qualities and colour; this process is referred to as curing. Another method used to alter flour characteristics for specific applications, such as improving the crumb of cakes, is bleaching.

Sugar Chemistry and Sweeteners

Sugars are classified based on their molecular structure. Sucrose, the most common granulated sugar used in baking, is a disaccharide. During the production of sugar, various byproducts are created. The uncrystallized liquid byproduct of the sugar refining process is known as molasses. Molasses is valued for its distinct flavour and its properties as a hygroscopic sweetener, meaning it has a high affinity for moisture. Another common example of a hygroscopic sweetener is corn syrup, which helps keep baked goods moist and extends shelf life.

In sugar cookery and caramelization, managing crystallization is vital. When caramelizing sugar, an interferent must be added to prevent the sugar from lumping or recrystallizing. Common interferents used in the kitchen include acids like cream of tartar. Additionally, certain cooked mixtures involving sugar, butter, and a liquid like milk or water result in specific products; for instance, a mixture that is applied while warm to create a smooth, rich coating is known as fudge.

Leavening Agents and Fermentation

Leavening agents are essential for providing lift and volume to baked products through the production of carbon dioxide gas. Chemical leaveners include baking soda and baking powder. A double-acting baking powder is unique because it reacts twice: first when it comes into contact with moisture, and then again when subjected to heat. For specific applications like cookies and crackers, where a very crisp texture and rapid gas release are desired, baking ammonia is the most appropriate leavener.

Biological leavening relies on the activity of yeast. Fermentation is the process by which yeast consumes sugar and converts it into carbon dioxide gas and alcohol. Yeast is highly sensitive to temperature and follow specific thermal thresholds. It is dormant at cold temperatures, specifically 4C4\,^\circ\text{C} (39F39\,^\circ\text{F}). The most common temperature range for active yeast fermentation is between 24C24\,^\circ\text{C} and 29C29\,^\circ\text{C} (75F75\,^\circ\text{F} to 84F84\,^\circ\text{F}). If subjected to high heat, yeast begins to die; it is completely killed at temperatures exceeding 59C59\,^\circ\text{C} (138F138\,^\circ\text{F}). During the bread-making process, the final rise is referred to as proofing, which is generally conducted at slightly higher temperatures than the initial fermentation to encourage rapid gas production before baking.

Mixing Methods and Troubleshooting

Proper mixing is critical for achieving the intended texture of a baked good. The creaming method is a common technique that involves beating soft fat (such as room-temperature butter) with sugar to incorporate air. In contrast, the muffin method typically utilizes liquid fat. Another preparation involves equal quantities of flour, sugar, and butter mixed together to create a crumbly topping known as streusel.

Deviations in technique or environment can lead to specific defects in the finished product. In muffin production, if the tops are cracked and uneven, it is usually an indication that the oven temperature was too high, causing the exterior to set before the interior finished rising. If the muffins exhibit large holes in the centre (tunneling), this is likely caused by over-mixing the batter, which develops too much gluten. Thick crusts on muffins can be caused by an excess of sugar in the recipe. In bread making, over-kneading the dough can lead to the formation of blisters on the crust of the finished loaf.

Egg Foams and Meringues

Egg whites are the primary ingredient in meringues and many light cakes. They whip into a more stable and voluminous foam if they are at room temperature rather than chilled. Adding even a small amount of fat or oil will prevent the foam from forming properly. In cake production, Angel food cake is notable for containing no fat, relying entirely on egg white foam for its structure.

There are several types of meringue, classified by their preparation method. Italian meringue is made by drizzling hot sugar syrup into whipping egg whites, which partially cooks the whites and creates a stable, glossy foam. A hard-baked meringue, often used for shells or cookies, requires a high ratio of sugar to ensure a crisp texture; typically, it contains twice as much sugar as egg whites by weight. For cake pans, a common pan coating can be made by mixing equal parts shortening, oil, and flour into a paste.

Speciality Pastries and Chocolate

Laminated or rolled-in doughs, such as those used for puff pastry, require specific handling. These doughs are not benched (allowed to rest on the table) before the final shaping and proofing stages. In the preparation of puff pastry, the initial dough before the fat is incorporated is called a detrempe. Classic pastries such as the St. Honore and the Napoleon both utilize puff pastry as a primary component. For finishing rolls, different washes provide different results; using milk alone as a wash will give dinner rolls a soft, brown crust.

Chocolate and fillings also require precise definitions. A pure, hardened chocolate liquor that contains no added sugar is termed unsweetened chocolate. A ganache is a versatile mixture made from chocolate and cream, frequently used as an icing or the base for truffles. Cream fillings for pies are specifically defined as fillings made with flavoured pastry cream. Finally, when working with gelling agents, granulated gelatin can be substituted with sheet gelatin using an equal amount by weight.

Flavourings and Extracts

Flavouring agents are used to enhance the sensory profile of baked goods. An extract is a specific type of flavouring made by mixing flavouring oils with ethyl alcohol, which acts as a carrier and preservative for the aromatic compounds.
