Water of crystalisation

Crystals of a compound contain water molecules bonded into the crystal structure (water of crystallisation).

Compounds containing water are called hydrated compounds.

If we hear hydrated compounds, we can break bonds holding the water molecules into the crystal. This drives them off as steam.
