    • The term "subsidiary" indicates that these crops were of secondary importance compared to the primary sugar cane crop.
    • Plantation owners utilized portions of the land to grow additional crops aside from sugar cane, which were either sold to local markets or exported for profit.
    • Specific examples of subsidiary crops grown on the estates include tobacco, ginger, corn, and various fruit orchards.
  • Provision Grounds

    • In larger colonies, with Jamaica being a primary example, land was more readily available than in smaller islands.
    • In these locations, plantation owners allocated small plots of poor-quality land to the enslaved population.
    • The purpose of these provision grounds was to allow the enslaved people to grow their own food, which served as a cost-saving measure for the owner, who then did not have to import food for them.
    • Crops cultivated by the enslaved in these grounds included yams, eddoes, plantains, cassava, and corn.
  • Pasture Land

    • Specific areas of the estate were designated as pasture for the grazing of livestock.
    • Cattle and oxen were particularly highly valued animals on the sugar estate because they provided the physical power necessary to operate animal mills.
  • Ratoon Canes and the Growth Cycle

    • Ratoons are defined as the new sugar cane plants that sprout naturally from stalks that have been previously harvested.
    • The use of ratoons offered significant efficiency advantages: whereas a normal, freshly planted cane required 1818 months to reach full maturity, a ratoon cane achieved maturity in only 1212 months.
    • Utilizing ratoons also reduced the estate's labor requirements, as it eliminated the need for the physically demanding process of replanting a fresh field of cane.

Residential and Disciplinary Structures

  • The Great House

    • The Great House served as the primary residence for the plantation owner. However, if the owner was an "absentee" living abroad, the house might be occupied by an overseer.
    • These houses were typically constructed on an elevated hill and featured a wrap-around veranda.
    • This architectural design served two strategic functions: it allowed the owner to oversee the entirety of the property and its operations, and it provided a vantage point and quick escape route in the event of an enslaved revolt.
  • The Workshops

    • The workshops were the central hub for enslaved artisans whose specialized skills were vital to the estate's maintenance and operation.
    • The specific types of skilled craftsmen found in these workshops included carpenters, coopers (barrel makers), wheelwrights, masons, and blacksmiths.
  • The Hospital or 'Hot House'

    • Despite its name, this building did not function as a medical facility in the modern sense. No professional doctors were sent to sugar estates to provide medical examinations or care for the enslaved workers.
    • The enslaved population was forced to rely on their own knowledge of medicine, utilizing their own medicine men and women for healthcare.
    • In reality, the building was primarily used as a site for confinement and physical torture. It was where runaways were imprisoned and where individuals were kept as punishment for acts of "insolence."

The Factory Yard and Industrial Processing

  • The Factory Yard Overview

    • The factory yard housed the most critical industrial buildings on the estate, all of which were central to the complex process of converting raw cane into sugar.
  • The Mill (Extraction Phase)

    • The mill was the site where harvested sugar canes were crushed to extract their juice.
    • There were several types of mills used depending on the estate's wealth: animal mills, water mills, and wind mills.
    • The animal mill was the most common and the least expensive to operate. In this setup, an ox was attached via a harness to three heavy iron rollers. As the animal walked in circles, the rollers spun.
    • The process of feeding canes into these spinning rollers was done by hand and was considered exceptionally dangerous for the enslaved workers involved.
  • The Trash House

    • After the juice was extracted in the mill, the remaining dry, fibrous cane stalks were known as "bagasse."
    • This bagasse was transported to the trash house to be stored and dried so it could later be utilized as a primary source of fuel for the estate's boilers.

The Sugar Refinement Process

  • The Boiling House

    • After extraction, the raw cane juice traveled from the mill to the boiling house through a wooden gutter.
    • The boiling house was characterized as a hot, steam-filled environment containing several large copper tanks or boilers.
    • The Clarifier: This was the first and largest boiler in the sequence. Here, a chemical known as "white lime" or "milk of lime" was added to the juice. This chemical caused impurities to rise to the surface as "scum."
    • Enslaved workers used large wooden ladles to manually scoop out this scum.
    • The Concentration Sequence: The juice was moved through a series of boilers, each smaller than the last.
    • The Teache: This was the final, smallest, and hottest boiler in the series. At this stage, the mixture reached its highest concentration, becoming extremely thick and sticky.
    • The Head Boiler: This was a highly skilled enslaved artisan who held the critical responsibility of determining exactly when the boiling process was complete and the mixture was ready to be removed.
  • The Curing House

    • Once the mixture was sufficiently cooled, it was shoveled into large wooden barrels known as hogsheads.
    • In the curing house, these hogsheads were placed on stilts, and small holes were drilled into their bases.
    • The barrels were left to sit for approximately 33 weeks. This allowed the liquid molasses to drip out of the holes, leaving behind the raw, dry sugar known as "muscovado."
    • Once the curing process was finished, the holes were sealed, and the hogsheads were prepared for shipment to Britain.

By-Products and Final Processing

  • The Distillery or Still House
    • The distillery represented the final stage of production on the estate and was the site where rum was manufactured.
    • Rum was produced by adding water and yeast to the molasses that had been drained during the curing process.
    • Both rum and molasses were extremely valuable by-products of the sugar-making process and were exported along with the primary sugar shipment.
