Different Cuts of Poultry
Whole Chickens: Marketed as either fresh or frozen.
Halves: Bird split from front to back to create two equal halves.
Breast Quarters: Cuts that include the wing and back; primarily white meat.
Split Breast: A breast quarter with the wing removed.
Split Breast without Back: A breast quarter stripped of wing and back portions.
Boneless, Skinless Breast: Split breast that assumes no skin or bones.
8-Piece Cut: Whole chicken cut into two breast halves, two wings, two thighs, and two drumsticks; typically sold without giblets.
Whole Chicken Wing: Features three sections: drumette, mid-section, and tip.
Wing Drumettes: First section of the wing, lies between the shoulder and the elbow.
Wing Mid-Section: Center section of the wing; includes the flipper.
Wing Mid-Section with Tip: Portion of the wing between the elbow and tip region.
Whole Chicken Leg: A combination of the drumstick and thigh; differs from leg quarter as it doesn’t include back portion.
Boneless, Skinless Leg: A leg processed without skin or bone.
Thigh: Portion of the leg situated above the knee joint.
Boneless, Skinless Thigh: Processed thigh similar to leg portion.
Drumsticks: Lower part of the chicken leg, located between the knee joint and hock.
Giblets: Includes the heart, liver, and neck of the bird.
