What is RESERVATION?
- An arrangement was made in advance to have a table available at a restaurant.

HELPFUL SUGGESTIONS:

  1. Welcome the guests cordially.

  2. Show the smooth flow of operations from the manager down to the line of servers and cleaners.

  3. The server should move briskly but with caution.

  4. Skewed perceptions can cause customers discomfort.

  5. Offer your guests some welcome drinks while waiting.

ESSENTIAL PART OF A RESTAURANT:

  1. Waiting Lounge - also known as “waiting room”. It is a small space in a restaurant where guests read a book, watch tv, etc. while waiting.

  2. Reception Area - room for receiving and entertaining guests.

  3. Dining Area - a room where meals are served and enjoyed by guests.

  4. KITCHEN AREA/STATIONS - area where food is prepared.

TYPICAL KITCHEN STATIONS:

  1. Sauté’ Station - is equipped with multiple cooking ranges.

  2. Grill Station - need to prepare many grill dishes at the same time.

  3. Fry Station - fryer or fryolator as it is sometimes called.

  4. Pizza Station

TYPES OF SILVERWARE, CHINAWARE, AND GLASSWARE

Silverware - any knives, spoons, forks, and other utensils that are silver plated, or are made from metal.

Cutlery - knives or anything that can cut.

Flatware - silverware and cutlery.

TYPES OF FORK:

SERVING FORK
- large fork with bigger handles

DINNER FORK
- 4-pronged fork generally used for the main dish.

SALAD OR DESSERT FORK
- 4-pronged fork shorter than a dinner fork.

OYSTER FORK
- 3-pronged, very small fork about 3 inches long.

PICKLE FORK
- 2-pronged very small fork

FISH FORK
- with a carved edge on the side.

TYPES OF SPOON:

SERVING SPOON
- large spoon used to serve individual portions of food.

DINNER SPOON
- oval-shaped head.

SOUP SPOON
- smaller than a dinner spoon, with a rounded bowl.

DESSERT SPOON
- medium-sized spoon, approximately 6-7 inches long.

DEMITASSE SPOON
- very small spoon proportionally sized to the demitasse cup.

ICE TEASPOON
- also called a soda spoon.
- a thin spoon with a long handle.

TYPES OF KNIFE:

DINNER KNIFE
- approximately 9” in length. used for slicing and other purposes when dining.

STEAK KNIFE
- sharp knife, usually lighter in weight than a dinner knife.

FISH KNIFE
- with a blade that is like spatula

SALAD KNIFE
- with a serrated blade used for cutting

SAUCE OR GRAVY LADLE
- spoon-shaped vessel with a short handle

SOUP LADLE
- spoon-shaped vessel with a long handle

CAKE OR PIE SERVER
- with flat, triangular shape, and has short handle

BUTTER SPREADER
- small broad spatula

Chinaware - refers to fine dished that are made from porcelain.

Melaware - refers to dishes that are made from melanin or plastic.

BASIC CHINAWARE AND MELAWARE:

BASE PLATE
- 12-14 inches in diameter plate

DINNER PLATE
- 10-12 inches in diameter plate that is used for individual plating.

LUNCHEON PLATE
- 9-inch diameter deep used for individual serving lunch.

SOUP PLATE
- 9-inch diameter deep used for serving soup

BREAD AND BUTTER PLATE
- 6-inch diameter plate used for serving bread.

CUP AND SAUCER
- used in pairs with the cup placed on top.

PLATTERS
- an oval-shaped dish with widths ranging from 8-20 inches.

SOUP TUREEN
- round or oval-shaped hollow container

GRAVY BOAT
- used for serving gravy or sauces.

MONKEY DISH
- small round plate with a hollow bowl.

TOOTHPICK HOLDER
- mini porcelain that can serve as containers.

SALT AND PEPPER SHAKER
- commonly have 3 holes or lesser

SOY OR VINEGAR DISPENSER
- small clear bottle with pourer on top

UNFOOTED WARES:

OLD FASHIONED GLASS
- used for serving water and juice.

HIGHBALL GLASS
- 12 oz. glass tumbler that can contain 240 to 350 ml. liquid.

WHISKEY GLASS
- 1 and ½ glass with a wide mouth and narrow base.

BEER MUG
- intended for serving beer to men.

PILSNER GLASS
- tall beer glass ideal for serving to women.

FOOTED WARES

GOBLET - 8 oz., and 12 oz., with a wide mouth on top of the stem.

CHAMPAGNE GLASS
- flute-like or a saucer-like with a hollow stem about 4 and ½ to 5 and ½ oz. capacity

COCKTAIL GLASS
- stemmed glass with an inverted cone bow.

WINE GLASS
- has tulip shape body with long stem and has 3oz. to 5oz. capacity

- large rounded drinking glass
