The Chemical Senses

  • Definition: Taste (gustation) and smell (olfaction) are chemical senses; they interact to create flavor experience.

Taste (Gustation)

  • Basic Tastes: Traditionally four (sweet, salty, sour, bitter); modern research suggests at least six.
  • Umami: Fifth taste related to monosodium glutamate; associated with savory flavors.
  • Fat Sensation: Evidence for a distinct taste for fatty content.
  • Taste Buds: Responsible for taste; have a life cycle of 10 days to 2 weeks.
  • Taste Pathway: Information transmitted to medulla, thalamus, limbic system, and gustatory cortex (under frontal and temporal lobes).

Smell (Olfaction)

  • Olfactory Receptors: Located in the mucous membrane at the top of the nose; interact with dissolved odor molecules.
  • Olfactory Pathway: Signals from receptors travel to olfactory bulb, then to limbic system and primary olfactory cortex (near gustatory cortex).

Variability in Olfactory Sensitivity

  • Species Variation: Dogs possess superior olfactory senses; can detect significant biological signals (e.g. blood glucose drops, tumors).
  • Pheromones: Chemical signals between individuals; important for reproductive behaviors.

Touch, Thermoception, and Nociception

  • Touch Receptors: Types include Meissner's corpuscles, Pacinian corpuscles, Merkel's disks, Ruffini corpuscles; respond to pressure and vibrations.
  • Free Nerve Endings: Respond to temperature and pain (nociception).
  • Pathway: Information travels to the spinal cord, then medulla, thalamus, and somatosensory cortex in the parietal lobe.

Pain Perception

  • Nature of Pain: Involves both physical and psychological aspects; serves an adaptive function to avoid injury.
  • Types of Pain: Inflammatory pain (tissue damage) and neuropathic pain (nerve damage).
  • Treatment Options: Ranges from therapy to medications; effectiveness varies.
  • Congenital Analgesia: Rare genetic condition where individuals cannot feel pain.

Vestibular Sense, Proprioception, and Kinesthesia

  • Vestibular System: Maintains balance; includes utricle, saccule, semicircular canals located in the inner ear.
  • Function: Provides information on head movement and gravitational forces, sends signals via vestibular nerve.
  • Proprioception and Kinesthesia: Provide body position and movement information, respectively.

Gestalt Psychology

  • Foundation: Focuses on perception beyond sensory input summation; emphasizes holistic processing.
  • Key Principles:
    • Figure-Ground Relationship: Segmentation into objects (figure) and backgrounds (ground).
    • Proximity: Objects close together are grouped.
    • Similarity: Similar objects are grouped together.
    • Continuity: Preference for smooth, continuous lines.
    • Closure: Perception organizes incomplete figures into complete objects.
  • Perceptual Hypotheses: Educated guesses that affect interpretation of sensory information; influenced by personal factors.
