The Systematic Approach to Tasting Spirits (SAT) and the accompanying Spirit-Lexicon provide a standardized framework to develop tasting skills and vocabulary. This framework allows a taster to link the sensory characteristics found in the glass to specific choices made during the production process, such as ingredients and distillation methods.

Developing the ability to write structured tasting notes is essential for those in spirit production, distribution, or sales, as it enables clear communication of a spirit's profile over time. Furthermore, analyzing the component parts of a spirit provides critical insights into mixology. Understanding these individual elements helps professionals appreciate the construction of classic cocktails and facilitates the creation of new recipes.

Tasting Preparation and Glassware Requirements

To ensure an accurate assessment, the tasting environment must minimize external influences. Ideal conditions include good natural light for judging appearance and an environment free from strong odors like tobacco, food, or cleaning products. Distractions should be limited to maintain focus, and sufficient space should be available for note-taking and glass arrangement. It is important to remember that alcohol consumption can impair assessment; therefore, spittoons or spit cups are necessary in educational and professional settings.

Tasters must prepare themselves by ensuring a clean palate, free from the flavors of food, cigarettes, or toothpaste. Neutral items like bread can help clear lingering flavors. Strongly scented personal products, such as perfumes or aftershaves, must be avoided as they interfere with the spirit's aroma. While the tongue can identify five tastes (sweet, bitter, sour/acid, salt, and umami), only sweetness and bitterness are considered relevant when assessing spirits. Tastes cannot be detected through the sense of smell.

Aroma refers to the sensations detected by the nose when sniffing the spirit in the glass. These are caused by aroma compounds entering the nasal cavity and interacting with sensory organs. The tongue has no role in detecting aromas. Flavour, conversely, describes the sensations detected by the sense of smell while the spirit is in the mouth. These compounds pass from the back of the mouth up into the nasal cavity (retronasal olfaction). Like aromas, flavours are not detected by the tongue.

Assessing Appearance: Clarity, Intensity, and Colour

While appearance cannot definitively determine a spirit's type or quality due to post-distillation manipulations, it is an essential part of a complete description. Assessment begins with clarity; most spirits are expected to be clear, and haziness is often seen as a fault, though some premium unfiltered spirits may show slight haze when chilled. Aniseed-based spirits exhibit a specific reaction called "louching," where they become opaque and cloudy upon the addition of water.

Intensity and colour are assessed before dilution. All spirits are water-white and colorless upon leaving the still; any color is the result of post-distillation processes covered in later chapters. Intensity is a five-point scale measuring how easy it is to see through the liquid, ranging from "water-white" (like vodka) to "opaque" (like cream liqueurs). Colors for wood-matured spirits typically range from lemon to amber and brown. Other spirits may use a separate color scale including pink, red, orange, yellow, green, blue, purple, or black.

Assessing the Nose: Methodology and Condition

When assessing the nose, tasters should use quick, short sniffs rather than the deep swirling common in wine tasting. Swirling spirits can cause excessive alcohol evaporation, which may numb the nose. After an initial assessment, the spirit should be diluted with water at a 50:5050:50 ratio (50%50\% water to 50%50\% spirit). Water helps open up the spirit, revealing complex layers and making individual aromas easier to distinguish. An exception is made for some fruit spirits, where water might make aromas less clear.

The condition of the spirit is evaluated as either "clean" or "unclean." Faults include excessive solvent aromas (indicating too many "heads" in the distillation), or smells of plastic, cheese, and sweat (indicating too many "tails"). Cork taint, characterized by a musty, damp-cardboard smell, is rare but possible. The most common fault is a spirit being "out of condition" due to being left in an open bottle too long, resulting in a loss of freshness and complexity.

Intensity on the nose is typically categorized as light, medium, or pronounced. Vodka is a unique case where brewers aim for "very light" or "neutral" intensity, though distinct aromas can still be identified with practice.

Assessing the Palate: Structure, Sweetness, and Texture

Assessing the palate involves the senses of taste, smell, and touch. A small sip should be taken to coat the entire mouth. Dilution is essential here, as undiluted alcohol can numb the mouth and obscure the spirit's structure. Drawing air across the tongue after spitting helps in assessing flavours and complexity. Sweetness is measured by sugar added after distillation. Newly distilled spirits are "dry" (zero sugar), even if the ethanol tastes slightly sweet. The scale moves from "dry" to "off-dry" (hint of viscosity), "medium" (clear sweetness but not the defining trait), and "sweet" (as seen in liqueurs).

Texture, or mouthfeel, is assessed through the sense of touch. Rather than a scale, descriptors are used to answer five questions about the feeling in the mouth: is it rough/harsh/sharp, warming, mouthfilling/full, watery/thin, or smooth/silky? Texture is influenced by alcohol level, sugar content, and the presence of fusel alcohols. A spirit may display a mix of textures, such as an initial mouthfilling sweetness followed by a thin, watery finish.

Evaluating Quality: Professional Criteria and Levels

Quality assessment is an objective process based on specific criteria rather than personal preference. The core criteria are Balance, Length/Intensity, Complexity/Purity, and Expressiveness. Balance refers to how structural and aromatic components work together; no single element (like peat or alcohol) should dominate to the point of being one-dimensional. High-quality spirits often have a long, pleasant finish where complex flavours evolve over several seconds.

Complexity involves the presence of multiple, distinct layers of flavour, though for spirits like vodka, "purity" and a seamless, smooth texture are the primary indicators of quality. Expressiveness measures the precision and clarity of flavours that represent the raw materials or production methods. Based on these criteria, spirits are rated as poor, acceptable, good, very good, or outstanding. A "good" spirit is balanced with distinct characteristics, while an "outstanding" spirit shows exceptional balance, complexity, and expressiveness.

The Spirit-Lexicon: Detailed Descriptor Categories

The Spirit-Lexicon organizes aromas and flavours into three primary groups to assist in systematic assessment. "Raw Material" descriptors include notes like butterscotch and sweetcorn for corn, oatmeal and malt for barley, and citrus or agave for grapes and succulents. "Processing" aromas include smoke (peat, medicinal) and esters (banana, pineapple, or floral notes from fermentation). This category also includes solvent or "heads" and "tails" faults if present in excess.

"Oak and Maturation" aromas result from the wood itself or oxygen influence. These include vanilla, toasted bread, and spices like cinnamon, as well as rancio characteristics from age, such as leather, tobacco, or forest floor. Tasters are encouraged to build their vocabulary by experiencing the actual fruits, vegetables, and spices mentioned in the Lexicon. Professional notes should avoid overly personal or obscure metaphors, focusing instead on terms that allow others to imagine the spirit's profile accurately.
