Steaks

  • All steaks come with a side, salad, and a garnish of steak butter (garlic, butter, margarine, white wine).

  • Steaks 16 oz or larger get two scoops of Maudeen’s.

Steak Cuts:
  • Maudeen’s Center Cut Filet:- Most tender cut, very lean.

    • Available in 6oz and 9oz.

  • Pat’s Ribeye:- Most flavorful cut, highest marbled, cut from rib roll.

    • Available in 10oz, 12oz, 16oz, and 21oz (Bone-In).

  • New York Strip:- Small strip of fat on one side.

    • Available in 12oz.

  • Wagon Boss Top Sirloin:- Leanest cut, firmest texture.

    • Available in 6oz, 8oz, and 10oz.

  • T-Bone:- One side is NY Strip; the other side is filet.

    • Available in 17oz.

  • Porterhouse:- Larger filet side than T-Bone.

    • Available in 22oz.

Steak Qualities
  • Marbling: small flecks of fat: key to flavor, juiciness, tenderness.

  • Maturity: The amount of time beef is harvested

  • Tenderness: how easily it can be chewed and cut

Steak Temperatures

  • Rare: Cool red center.

  • Medium Rare: Warm red center.

  • Medium: Pink throughout.

  • Medium Well: Thin line of pink.

  • Well Done: No pink.

  • Grilled Onions: 8 oz grilled onions.

  • Fried Shrimp Addition: Five jumbo shrimp, lightly battered in cajun flour, cocktail sauce.

  • Grilled Shrimp Addition: Four jumbo shrimp, chargrilled and basted with marinade, S7 spice.

  • Smothered Topping: Diced sauteed mushrooms, grilled onions in garlic butter.

  • Sauteed Mushrooms: 6 oz whole mushrooms sauteed in garlic, white wine, butter.

  • Cognac Sauce: Brown sauce infused with cognac and spices.
