Focaccia Dough Preparation
- Ingredients: flour, malt, yeast, water.
- Mix in a planetary mixer until dough forms.
- Add olive oil and salt.
- Let the dough rise.
- Stretch and poke holes in the dough; let rise again.
- Add oil, water, and salt before baking.
Potato Topping
- Thinly slice potatoes.
- Mix with oil, salt, and grated garlic.
- Spread evenly on a baking sheet and bake until golden and crispy.
Green Bean Preparation
- Trim green beans.
- Boil in salted water for about 2 minutes.
- Drain and season with oil and lemon.
Pesto Preparation
- Combine pecorino cheese, Parmesan cheese, pine nuts, olive oil, basil, salt, and garlic in a blender.
- Blend until smooth.
Focaccia Assembly
- Slice the focaccia and place it on a cutting board.
- Add a small amount of stracchino cheese and bake briefly.
- Add potatoes, pesto, and green beans.
- Add more pesto and close with another slice of focaccia.
