Focaccia Dough Preparation

  • Ingredients: flour, malt, yeast, water.
  • Mix in a planetary mixer until dough forms.
  • Add olive oil and salt.
  • Let the dough rise.
  • Stretch and poke holes in the dough; let rise again.
  • Add oil, water, and salt before baking.

Potato Topping

  • Thinly slice potatoes.
  • Mix with oil, salt, and grated garlic.
  • Spread evenly on a baking sheet and bake until golden and crispy.

Green Bean Preparation

  • Trim green beans.
  • Boil in salted water for about 2 minutes.
  • Drain and season with oil and lemon.

Pesto Preparation

  • Combine pecorino cheese, Parmesan cheese, pine nuts, olive oil, basil, salt, and garlic in a blender.
  • Blend until smooth.

Focaccia Assembly

  • Slice the focaccia and place it on a cutting board.
  • Add a small amount of stracchino cheese and bake briefly.
  • Add potatoes, pesto, and green beans.
  • Add more pesto and close with another slice of focaccia.
