2 tbsp lemon zest
Dairy:
1 cup (200g) unsalted butter, room temperature
1 \frac{1}{2} cups (360ml) buttermilk
Liquids:
3 tbsp oil
1 tsp vanilla extract
Eggs:
4 large egg whites
1 large egg
Filling:
Heaping \frac{1}{2} cup raspberry preserves (for between cake layers)
