Ingredients:

    • 2 tsp baking powder

    • \frac{1}{2} tsp baking soda

    • 1 tsp kosher salt

  • Sugar and Zest:

    • 1 \frac{1}{2} cups (300g) granulated sugar

    • 2 tbsp lemon zest

  • Dairy:

    • 1 cup (200g) unsalted butter, room temperature

    • 1 \frac{1}{2} cups (360ml) buttermilk

  • Liquids:

    • 3 tbsp oil

    • 1 tsp vanilla extract

  • Eggs:

    • 4 large egg whites

    • 1 large egg

  • Filling:

    • Heaping \frac{1}{2} cup raspberry preserves (for between cake layers)
