Appetizers and Starters

Most starters at the establishment utilize the smoker to enhance flavor profiles. It is vital for staff to know the specific toppings for each item as guests frequently inquire about these details. The Brisket Queso is a signature item featuring queso loaded with smoked brisket and finished with a combination of Mexican crema, barbecue sauce, cilantro, and pico de gallo, all topped with a dusting of paprika.

BBQ Nachos are constructed with a choice of smoked meat served over a base of queso and mixed cheese. The dish is layered with Mexican crema, cilantro, and barbecue sauce, with pico de gallo served on the side. Jerry's Smoked Meatballs consist of five large meatballs made from a blend of brisket and pork mixed with homemade croutons, shredded cheese, fresh garlic, and onions. These are served under sweet barbecue sauce and jalapeno ranch, garnished with chives and cilantro.

Smoked and Stuffed Jalapenos are offered in a portion of four peppers. These peppers are stuffed with a combination of smoked meats and cream cheese before being wrapped in bacon and smoked. Cheese Fries are served piled with shredded cheese, thick-cut bacon, and chives. Chicken Wings are first smoked and then deep-fried. Guests may choose between a dry rub or Marty B's style, which involves the dry rub tossed in house barbecue sauce. Portions for wings come in either $10\,oz$ or $20\,oz$ sizes and are served with both ranch and jalapeno ranch on the side.

Chips and Salsa features warm tortilla chips accompanied by house-made salsa and a unique jalapeno ranch that contains pico de gallo within the dressing. Onion Rings are prepared with a panko breading and deep-fried, served alongside jalapeno ranch.

Salads and Dressings

Every salad offered is unique, featuring its own specific blend of greens and a dedicated dressing. The Hill Country Strawberry salad uses a spring mix tossed in balsamic vinaigrette, topped with cheese crumbles and grilled chicken. The Southern Fried BBQ salad consists of iceberg and romaine lettuce tossed in ranch dressing with mixed cheese, bacon, pico de gallo, roasted corn, fried chicken, and barbecue sauce.

The Marty B's Salad uses iceberg lettuce tossed in jalapeno ranch with mixed cheese, croutons, red onions, eggs, and tomatoes. The protein for this salad varies by time of day: during lunch, it features $4\,oz$ of San Antonio meat (grilled chicken), while at dinner it features $8\,oz$ of brisket. The San Antonio salad is a mix of iceberg and romaine lettuce in jalapeno ranch with grilled chicken, corn, tomatoes, red onions, jalapenos, cotija cheese, avocado, and tortilla strips. The Grilled Chicken Caesar consists of romaine lettuce in Caesar dressing with croutons, asiago cheese, and grilled chicken.

There are seven primary dressings available for salads: Ranch, Jalapeno Ranch, Blue Cheese, Honey Mustard, Balsamic Vinaigrette, Caesar, and Oil and Vinegar.

Burgers and Sandwiches

Any order for a burger or steak must begin with an inquiry into the guest's preferred cooking temperature. The kitchen operates on the following temperature standards: Rare results in a cool red center; Medium Rare provides a warm red center; Medium is served with a warm pink center; Medium Well has a slightly pink center; and Well Done is cooked through with no pink remaining.

Cheese options available for any sandwich or burger include American, Gouda, Blue Cheese Crumbles, Mixed Cheese, and Pepper Jack. The BBQ Sandwich features a choice of smoked meat dressed with red cabbage slaw, smoked jalapenos, and smoky chipotle sauce.

Steaks, Chicken, and Fish

Beef cuts available include the Filet, which is offered in $6\,oz$ and $8\,oz$ portions, a Ribeye at $14\,oz$, and a Texas Strip at $12\,oz$. The main dining menu includes two fish options: salmon and red snapper. All steaks, fish, grilled chicken breast, and meat platters are served with a choice of either a side salad and one homemade side, or two homemade sides.

Barbecue Meats and Platters

There are seven varieties of smoked meats available: Brisket, Ribs, Turkey, Pulled Pork, Chicken Quarter, Traditional Sausage, and Jalapeno White Cheddar Sausage. Every barbecue order is garnished identically with smoked jalapenos, pickled onions, house-made pickles, and a dinner roll. For meat platters, the two-meat option contains a total of $0.5\,lb$ of meat, while the three-meat platter contains $0.75\,lb$.

Tex-Mex Specialties

Fajitas can be ordered five different ways: chicken, skirt steak, a combination of chicken and steak, salmon, or veggie. Tacos featuring brisket, chicken, or pork are served on flour tortillas. The salmon tacos are the only variety served on corn tortillas.

Specific taco builds are as follows: Brisket tacos are dressed with grilled onions, poblano strips, sweet barbecue sauce, smoky chipotle, cilantro, and cotija. Smoked Chicken tacos feature pickled onions, smoked jalapenos, cotija, cilantro, and smoky chipotle. Pulled Pork tacos are dressed with red cabbage slaw, cotija, cilantro, and smoky chipotle. Salmon tacos include shredded red cabbage, pickled onions, chipotle sauce, cotija, and cilantro.

Other Tex-Mex items include the Texican Tamale Cake, a sweet corn griddle cake topped with a choice of smoked meat, house-made slaw, smoky chipotle, and cilantro. The Smoked and Stuffed Poblano is filled with chicken, lean brisket, pork, and cream cheese. Brisket Enchiladas are topped with green chile queso, tomatoes, onions, avocado, fresh jalapenos, and cilantro. Quesadillas can be filled with any smoked meat or fajita beef or chicken. These are served with a choice of charro beans or rice, alongside tortilla chips, salsa, and jalapeno ranch.

Side dish policy for Tex-Mex items allows for charro beans or rice at no additional charge. Swapping these for any other side costs an additional $1$, while swapping for a salad or onion rings costs $3$. Four specific items are served with both rice and beans: the Smoked and Stuffed Poblano, Salmon Tacos, Brisket Enchiladas, and Fajitas for Two.

Kids Menu (Little Buckaroos)

The kids menu includes McKaley's Mac and Cheese, Grilled Cheese, a $4\,oz$ Chicken Breast, Madison's Tenders, the Brooks Burger, the Bella Dawg, and a Cheese Quesadilla. The Brooks Burger, Bella Dawg, Madison's Tenders, and grilled cheese are all served with french fries. When dining on the patio, the kids menu excludes the cheese quesadilla.

Desserts

There are four available desserts. The Ooey Gooey Toffee Treat and the Texas Sheet Cake are both served with Marty B's vanilla ice cream. Lydia's Carrot Cake is served accompanied by a rum sauce. The Campfire S'mores Kit provides equipment for the fire, including four graham crackers, two marshmallows, and one Hershey's chocolate square.

Lunch Menu

The lunch menu is available Monday through Friday from $11\text{ AM}$ to $3\text{ PM}$. Several high-selling items are exclusive to this menu, such as the BBQ Flatbread, Brisket Meatloaf, and the Southern Fried Tamale Cake. The BBQ Flatbread features a choice of meat with sweet barbecue sauce, mixed cheese, Mexican crema, red onions, and cilantro, served with jalapeno ranch.

The Brisket Meatloaf is bacon-wrapped and served with au gratin potatoes and green beans. The Southern Fried Tamale Cake features chicken tenders over a tamale cake with honey, Valentina hot sauce, and cinnamon butter, served with green chile mac and cheese. The Spicy Plum Turkey Burger includes spicy plum mayo, spring mix, tomatoes, red onions, smoked gouda, and bacon on a whole wheat sourdough bun, served with sweet potato fries.

Both the Chicken Fried Chicken and Chicken Fried Steak are plated with mashed potatoes, green beans, and homemade bacon gravy. The Stuffed Fried Chicken is a chicken breast filled with mixed cheese, grilled onions, grilled poblanos, and smoked sausage, served on a bed of Mexican rice. The Texas Dog features smoked sausage topped with homemade chili, mixed cheese, mac sauce, red onions, and smoked jalapenos. Staff must ask guests whether they want traditional or jalapeno white cheddar sausage for this item. Lunch Tenders include three pieces served with coleslaw and fries, and lunch Fish Tacos are specifically made with salmon. The two lunch-exclusive sandwiches are the Smoked Ham Sandwich and the Smoked Sirloin Sandwich.

Patio Menu and Happy Hour

The patio menu is a condensed version of the main offerings. Available salads on the patio are the Marty B's Salad, Side Salad, and Side Caesar. Grill options include the $8\,oz$ filet, ribeye, chicken breast, and salmon. Exclusive or highlighted patio items include Michael's Brisket Bowl, which features brisket over Mexican rice and charro beans with queso, roasted corn, barbecue sauce, Mexican crema, tortilla strips, and cilantro, served with tortillas.

The Bryan Family Platter is a large-format meal consisting of one pound each of six different meats, four smoked jalapenos, two quart-sized sides, bread, and pickled vegetables. Happy Hour occurs Monday through Thursday from $3\text{ PM}$ to $6\text{ PM}$. During this time, beer and house liquors are discounted by $1$, while wine and cocktails are discounted by $2$. While Happy Hour appetizer specials are restricted to the bar area, the drink discounts are available throughout the entire restaurant.
