Heat Methods
Dry-Heat Sterilization
- Common method used for sterilization.
- Less effective than moist heat as it does not penetrate cells as well.
Moist-Heat Sterilization
- More effective than dry heat.
- Uses steam or boiling water to achieve sterilization, penetrating cells more effectively.
Pasteurization
- Purpose: To kill pathogens and reduce spoilage microbes in food.
- Methods:
- High-Temperature Short-Time (HTST):
- Quickly heats food to eliminate pathogens while preserving quality.
- Ultra-High Temperature (UHT):
- Sterilizes food for long-term storage without refrigeration.
- High-Temperature Short-Time (HTST):
Refrigeration & Freezing
- Refrigeration:
- Slows down microbial growth.
- Freezing:
- Halts microbial growth completely.
- Can kill some microorganisms during the freezing process.
High-Pressure Processing
- Mechanism: Involves applying high pressure to food, effectively killing microbes.
- Related Use:
- Hyperbaric Oxygen Therapy:
- Used for treating certain infections, making use of increased oxygen pressure.
- Hyperbaric Oxygen Therapy:
Desiccation
- Description: Process of drying out food to preserve it.
- Enhancement:
- Addition of salt or sugar reduces water activity further, improving preservation.
Lyophilization
- Definition: A method combining freezing and desiccation for long-term storage of materials.
- Rehydration:
- Microbes can potentially be rehydrated and become active again after reintroduction of moisture.
Radiation
- Ionizing Radiation:
- Effective sterilization method for heat-sensitive materials, such as medical devices.
- Nonionizing Radiation:
- Useful for surface sterilization, commonly used in laboratories and hospitals.
Filtration
- HEPA Filters:
- High-Efficiency Particulate Air filters that prevent airborne microbes, particularly in hospital settings.
- Membrane Filtration:
- Technique that removes bacteria from heat-sensitive solutions, maintaining the integrity of the solution.
