Krakkauer thinks MC died of mold on the seed (swainsonine). This type of mold prevents the body from eating and drinking since it's difficult to do so. MC did die of starvation but even though the mold causes starvation that wasn't the cause of his desth, Swainsonine does not immediately kill or cause chronic poisoning but since the body can't flush the mold out of the system it accumulated it.
